My friend Dina sent me this recipe. I tried it tonight and it tastes unbelievable!
Beets are high in antioxidants, carotenoids, iron, folate and other minerals.

Beets, cooked and peeled, 2-3 medium
Walnuts or pecans, 3/4 cup
Balsamic vinegar, 2 tbsp
Garlic, 2 cloves, crushed
3 tbsp orange juice

2 tbsp orange rind, finely grated

salt, pepper to taste

optional: 1/2 tbsp of agave syrup

Put all of the ingredients, except for the orange rind in the blender. Blend until smooth. Add the orange rind. Serve cold with rye bread.
