Now that the spring is here, perhaps it’s time for a fun warm-weather salad.  This salad is different and goes beyond the cucumber-tomato combo. You can add some goat-cheese, if you like it. Avocado works well here, too.  The salad supplies vitamin C, folic acid, fiber and protein.

Ingredients:

3 cups of arugula leaves, washed

2 celery stalks, sliced
1 cup  strawberries, sliced
1/2 cup red onions, chopped
3 tbsp. almond slices
1/3 cup fresh lemon juice ( about 1 1/2 lemons)
zest from  2 lemons
1 tbsp. agave syrup
3 tbsp. olive oil
salt, pepper to taste

Combine arugula, onion, celery and strawberries. Whisk together lemon juice, agave, zest, oil, salt and pepper.  Just before serving, pour dressing over salad ingredients and sprinkle with almond slices.
